Tomato Soup Medley, with Giant Garlic Butter Brioche Croutons

Tomato Soup Medley, with Giant Garlic Butter Brioche Croutons,


So this one I'd a bit of a Frankenstein soup, I just threw bits together, fortunately it worked & the Soup was delicious, so I'm sharing my concoction with you,


Ingredients


6 x Tomato

2 x Potato

2 x Carrots

1 x Red Onion

1 x White Onion

4 x Garlic Cloves

2 x tblsp Butter

1 x tblsp Olive Oil

1 tspn Sea Salt

1 tspn Cracked Black Pepper

4 x Brioche Hotdog Buns

1 litre boiling water

2 x Vegetable stock cube or jelly pots

1½ tspn Mixed herbs or ¼ tspn of each Basil, Marjoram, Oregano, Rosemary, Sage, Thyme,


The Soup


So literally everything goes in a Hot pan with the butter & the oil, cook until completely Caramelised and soft,


Once Caramelised add 1liter of boiling water with two Vegetable Stock Cubes, bring to a simmer for 30 minutes,


Remove from the heat & Blend until smooth, add more stock if required, pass through a strainer if required, but I don't mind the bits,


Season to taste,


The Croutons


The Croutons are Brioche Hotdog Buns covered in Garlic Butter & Air Fried for 5 mins Then Topped with Cheddar, or Parmesan I tried both, and they are delicious,


Because Brioche Buns are sweet they go so well with Soup,
