Slow Roast Leg of Lamb, with a side of Roast Beef, Roast Potato's, Beef Dripping Yorkshire Puddings

Sunday has to be my favourite day of the week, I've just made a delicious dinner, and wanted to share for inspiration,


Slow Roast Leg of Lamb, with a side of Roast Beef, Roast Potato's, Beef Dripping Yorkshire Puddings, and Obviously Delicious, Cauliflower & Broccoli Baked Cheese, Sage & Onion Stuffing, Lincolnshire Sausage,


Served with Mashed Potato and Seasonal Vegetables


Ingredients

2.2kg Leg of Lamb

1 tblsp Rosemary

1 tblsp Thyme

1 tblsp Garlic Granules

½ tblsp Sea Salt

½ tblsp Cracked Black Pepper

3 tblsp Olive Oil

3 Beef Stock Pot's or Cubes

1 litre Boiling Water


The Lamb was slow cooked in the oven covered in Olive Oil, Rosemary & Thyme, Sea Salt Cracked Black Pepper,


Add 1ltr of Beef stock I used 3 stock pot's Poured around it, Covered with foil and slow cooked in the oven @ 170ºC for 3.5 hours,


Then remove the foil and cook at 200ºC for 30 minutes, remove and rest for 25 minutes,


The Roast Beef & Potatoes go in on on the second hour of the lamb, uncover with the lamb & cook for the remaining 30 minutes,
