Saag Masala Chicken Skewers:


Ingredients:


- 1 lb chicken breast, cut into bite-sized pieces

- 1 cup Greek yogurt

- 2 tbsp olive oil

- 2 tbsp lemon juice

- 2 tbsp garam masala

- 1 tbsp ground cumin

- 1 tbsp ground coriander

- 1 tsp turmeric

- 1 tsp paprika

- 1/2 tsp cayenne pepper (adjust to taste)

- Salt and pepper to taste

- 2 cloves garlic, minced

- 1 inch piece of ginger, grated


Instructions:


1. In a bowl, combine yogurt, olive oil, lemon juice, garam masala, cumin, coriander, turmeric, paprika, cayenne pepper, salt, pepper, garlic, and ginger. Mix well to form a marinade.


2. Add the chicken pieces to the marinade and coat them well. Cover and refrigerate for at least 1 hour, preferably overnight.


3. Preheat the grill to medium-high heat.


4. Thread the marinated chicken pieces onto the soaked skewers.


5. Grill the chicken skewers for about 6-8 minutes per side or until cooked through and slightly charred.


6. Serve the grilled chicken skewers on a bed of Saag Masala Sauce and enjoy!

Saag Masala Sauce.


Ingredients:


- 2 tablespoons vegetable oil

- 1 onion, finely chopped

- 2 cloves garlic, minced

- 1-inch piece of ginger, grated

- 1 teaspoon cumin seeds

- 1 teaspoon garam masala

- 1 teaspoon turmeric

- 1 teaspoon ground coriander

- 1/2 teaspoon chili powder

- 1 can (14 oz) diced tomatoes

- 1/2 cup water

- Salt to taste

- 1 cup spinach, chopped

- 1/2 cup heavy cream


Instructions:


1. Heat the vegetable oil in a pan over medium heat. Add the cumin seeds and cook until they start to sizzle.


2. Add the chopped onion and sauté until translucent, about 5 minutes. Add the garlic and ginger, and cook for another minute.


3. Stir in the garam masala, turmeric, ground coriander, and chili powder. Cook for another minute to toast the spices.


4. Add the diced tomatoes, water, and salt. Simmer the sauce for about 10 minutes.


5. Add the chopped spinach and cook until wilted, about 5 minutes.


6. Stir in the heavy cream and cook for an additional 2 minutes.


7. Adjust seasoning with salt if needed.
