Roast Carrot Sage & Green Onion Soup, Served with a side of Giant Garlic Butter Mozzarella, Green Onion Topped Croutons, With Grated Parmesan, or any strong Cheese,
So in an effort to discover new tastes, I've stumbled upon a new concoction, now I've completely made this from scratch, thinking cap on, I've basically thrown together things I like,
If I'm honest this is probably the best flavoured Carrot Soup I've ever made, and I've made hundreds,
So my Medley of ingredients
10 x Carrots
1 x large Potato
5 x small Tomato
1 x large Red Onion
3 x Green Onions (spring onions)
2 knorr Vegetable stock pot's
1.2ltr Boiling Water
1½ tspn Garlic Granules
1½ tspn Onion Granules
2 tblsp Butter
½ tblsp Olive Oil
½ tblsp Sage Finely Chopped
½ tspn Sea Salt
½ tspn Cracked Black Pepper
The Soup
Add the Butter, Olive Oil and all the Vegetables the Herbs Salt, Pepper, Garlic, Onion Flakes, to a large Pan, Cook them on a medium heat for around 20 minutes until completely Caramelised and Soft,
Make sure to keep scraping the yummy bits off the bottom of the pan,
Add 1.2ltr of boiling water with the two stock pot's, bring to a boil then simmer for around 30 minutes on a low heat with the lid on,
Once all the vegetables are soft, using a blender, turn the soup into a liquid, add more stock if its too thick,
The Garlic Butter Croutons
Brioche Buns, covered in Garlic Butter, cooked in the air fryer or under the grill, for a few Minutes, until golden brown, then topped with Mozzarella, Sprinkled with Green Onions,
With a generous amount of Grated Cheddar or Parmesan,
I can honestly say this was delicious,
