Roast Beef Cast Iron Skillet Sharing Platter.

Served with Extra Tasty Roast Potatoes. Sage & Onion Stuffing. Inside delicious Oven Bottom Muffins.


Cheddar & Parmesan Infused Parsley Mashed Potato Bake.


Beef Dripping Yorkshire Puddings & Lashings of Dipping Roast Beef Gravy


Ingredients:

- 1.5 kg beef roast

- Salt and pepper

- Olive oil


Instructions:


1. Preheat your oven to 180°C (350°F).


2. Season the beef roast generously with salt and pepper.


3. Heat a cast iron skillet over medium-high heat and add a tablespoon of olive oil. Sear the beef roast on all sides until nicely browned.


4. Transfer the skillet with the beef roast to the preheated oven and roast for about 1 hour and 15 minutes, or until the internal temperature reaches your desired level of doneness.


5. While the beef is roasting, prepare your roast potatoes. Cut the potatoes into chunks, toss them in olive oil, salt, and pepper, and roast in the oven until golden and crispy.


6. Prepare the sage and onion stuffing according to the package instructions.


7. Make the mashed potato bake by boiling and mashing potatoes, then mixing in grated cheddar, Parmesan, and chopped parsley. Spread the mixture in a baking dish and bake until golden and bubbly.


8. Prepare your favorite oven bottom muffin recipe and set aside.


9. For the Yorkshire puddings, mix equal parts of plain flour, eggs, and milk until smooth. Pour a small amount of beef drippings into each section of a muffin tin and heat in the oven until smoking hot. Pour the batter into the tin and bake until puffed and golden.


10. For the roast beef gravy, use the juices from the roast beef in the skillet, add some beef stock and cornstarch to thicken, and season to taste.


Once everything is ready, arrange it all on a large platter and enjoy.
