My Garlic Herb-Crusted Roast Beef & Gammon Sharing Platter,


So in an effort to make the most delicious Roast Beef & Gammon, I prefer a Salmon cut Beef Roasting Joint, and a side of Cumberland Sausages,


I cover both joints of meat and the soon to be Roast Potatoes, with my seasonings,


1.5kg Beef Roasting Joint, Salmon Cut

1.5kg Gammon Roasting Joint

1x tblsp Cracked Black Pepper

2 tblsp Chopped fresh Basil or 2 tspn dried Basil leaves

4½ tspn chopped fresh Thyme or 1½ tspn dried Thyme leaves

1x tblsp chopped fresh Rosemary or 1 tspn dried Rosemary

1x tblsp minced Garlic

½ tspn salt more or less to taste


Preheat oven to 180ºC

Place the roast in the meat a shallow roasting pan, Combine cracked peppercorns, basil, thyme, rosemary and garlic in a small bowl, Rub the spices on top of the Roasts and potatoes, lashings of Olive Oil,


Roast for 2 hours, at 180ºC Uncover turn the oven upto 200°C and roast for another 30mins to crisp up the joints and the roast potatoes,

Transfer the roast to a cutting board. Cover the roast with foil and allow it to sit for 10-15 minutes. The internal temperature of the roast will rise another 5-10 degrees. Allowing the meat to tenderise,


To serve, cut into ¼ inch slices. Serve with mashed potatoes and seasonal vegetables.
