My Creamy Coconut Korma, Served with Garlic Butter and Coriander white Rice

My Creamy Coconut Korma, Served with Garlic Butter and Coriander white Rice, Aldi Inspired Cuisine Garlic and Coriander Naan, and a side of skins on Fries


OK I'm no expert on Curry, i literally making it up as I go along, I always cook to taste and this is what I came up with, and if I'm honest it was absolutely delicious,


Ingredients


6 x large Chicken Breasts Chopped into cubes

2 x Onions Chopped Finely

2 tblsp Lazy Garlic,

1x tsp Ginger,

2 x tsp Ground cumin

2 x tsp Ground corriander

1 x tsp Ground turmeric.

1/2 teaspoon Chili Powder

1 x tin Coconut Milk or Coconut Cream

1 x tsp Sea Salt

1 x tsp Cracked Black Pepper

2 x tblsp Olive Oil,

1 x tblsp Butter

100ml Double Cream (optional)

1 x tsp Garam masala or Korma Powder


Total cost £10.56 that's £1.32 per person. Serve 8 people


Start with a large frying pan preferably one that has a lid,


Add the Olive Oil and the Butter, add the Onions, Garlic Sea Salt Cracked Black Pepper, fry until soft and Golden Brown,


Add the Chicken and rest of the spices cook on a medium heat until the Chicken is fully cooked,


Add the Coconut Milk and the Double Cream, place the lid on the pan Simmer and reduce it down to a Creamy Smooth Consistency,


Sprinkle over some Coriander, when ready to serve,


The Rice


75g dry rice per person, once cooked, add a tblsp of Garlic Butter and some Chopped Coriander. Sea Salt and Cracked Black Pepper,

Butter a small ramekin press the rice in firmly and the rice will easily fall out the ramekin, served with Aldi Inspired Garlic and Coriander Naan,


I did also make a Tikka Masala at the same time I will post that one shortly
