Chicken Enchiladas, Stuffed with lashings of Cheddar.
Fajitas Fries, with White Onion, Green, Red, and Orange Peppers, With Fajitas Season, the vegetables were fried in Garlic Butter,
Total cost £12.55 this will feed a family of six at a cost of £2.09 per person, absolutely a bargain.
Fajitas Fries Ingredients
1.5kg Salt & Pepper Fries
1 x Red Pepper
1 x Orange Pepper
1 x Yellow Pepper
¼ Green Cabbage
1 x Large White Onion
½ tbsp hot chilli powder
2 x tbsp smoked paprika
1 x tbsp ground cumin
1 x tbsp garlic powder
½ tbsp ground coriander
1 x heaped tbsp dried oregano
2 x tblsp Butter
Splash of Olive Oil
Add all the vegetables and seasonings to a large frying pan, add the butter, cook the vegetables until soft and slightly Caramelised.
Add them to your Fries and mix gently, Serve straight away.
Chicken Enchiladas Ingredients
1kg Chicken Breast chopped into long thin slices, cooked in garlic butter and olive oil.
Until fully cooked, season to taste. Leave to one side until your sauce is ready.
Village Bakery Chargrilled Tortilla Wraps
Sauce below 👇
2 x tblsp olive oil
2 x tblsp plain flour
1x tblsp chili powder
1x tspn ground cumin
1 x tspn garlic purée
½ tspn ground coriander
½ tspn dried oregano
2 x tblsp tomato purée
2 x Knorr stock pots, chicken or vegetable
½ tspn Sea salt or more to taste
1x tspn apple cider vinegar
500ml water
Heat the oil in a large frying pan, add the flour, cook for 2 minutes, now add all the Spices, mix for 30 seconds.
Now add the stock, whisk frantically and reduce down until it thickens.
Season with salt and pepper, and more apples cider vinegar if required.
Add ¾ of your sauce to your Chicken and simmer for 5 minutes, Add 100g Cheddar and gently mix,
Fill six large wraps, with the chicken. pour over the remaining sauce, top with Cheddar and place them in the oven for 10 minutes until the Cheese is Golden Brown and melted. Sprinkle over some Parsley.
Served with a delicious Rainbow Feta Salad, Coleslaw and Potato Salad, Absolutely delicious
