Mediterranean Fish Skillet.

Mediterranean Fish Skillet.


Pan Seared White Fish in Garlic Butter & White Onion.


Simmered in Cherry Tomatoes, With Basil & Oregano Passata.


Topped with Lashings Grana Padano, Baked in the oven. Served on a bed of Penne


Mozzarella Pesto & Tomato Flatbread. With a side of Sage & Onion Fries.


I'm going to blow my own trumpet, this was absolutely delicious 😋


Ingredients


4/6 Pieces White Fish, Atlantic Cod, Haddock, Hake, Halibut, Flounder, Sole, or Basa, I used Cod. But Basa is probably the Cheapest

400g Tinned Cherry Tomatoes

700g Basil & Oregano Passata

1 Large White Onion

1 tblsp Lazy Garlic, or 6 Garlic Cloves Minced

1 tblsp Parsley

1 tspn Sea Salt

½ tspn Cracked Black Pepper

1 tblsp Tomato Purée

1 tbsp Garlic Granules

1 tspn Basil

2 x tbsp Salted Butter

1 tspn Oregano

50g Cheddar

50g Parmigiana Reggiano, Grana Padano, Asiago, Pecorino, Romano, Romano, Grana, Padano, Piave, Manchego, Sapsago. Any of these will suffice. I used Grana Padano.


Directions


Preheat the oven to 200ºC


Chop your White Onion add to you Skillet with a drizzle of Olive Oil and two tblsp of Salted Butter. On high heat until soft.


Now Turn the heat down to medium


Now add your Garlic, Tomato Purée, and Herbs. Stir for a few minutes to combine,

Now add your fish, fry the fish on both sides for around 4 minutes,


Keep basting the fish in the Garlic Butter. One Done Set to one side.


Using another pan add the Cherry tomatoes, with the Basil and Oregano Passata, Bring to a gentle simmer, Season to taste, also add some garlic Granules.


Ones the sauce has simmered for 10 minutes, Gently add to you fish and combine with the onion mixture, stire well, be careful not to break up the fish.


Now top with Grated Cheddar, and lashings of Parmesan. Garnish with Parsley.


Place in the oven for around 20mins until its bubbling.
