Mediterranean BBQ chicken with mixed peppers, onions, and cherry tomatoes, served with garlic butter star baked potatoes topped with cheddar:
I served this as both wraps or a fully loaded baked potato topped with the Mediterranean chicken and peppers.
It was absolutely delicious.
Mediterranean BBQ Chicken with Mixed Peppers and Onion, Cherry Tomatoes:
Ingredients:
- 6 boneless, skinless chicken breasts or 8 thighs
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 onion, sliced
- 1 cup cherry tomatoes
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried basil
- 1 tsp chili flakes
- Salt and pepper to taste
Instructions:
1. In a large bowl, mix together olive oil, minced garlic, dried oregano, dried basil, salt, and pepper.
2. Add the diced chicken breasts to the bowl and coat them with the marinade. Let them marinate for at least 30 minutes in the refrigerator, but I prepare it in the morning so it marinades for around 8 hours.
3. Preheat the BBQ to medium-high heat. Fry the chicken for about 15 minutes until they are cooked through.
4. In the meantime, BBQ the sliced peppers, onion, and cherry tomatoes until they are slightly charred and tender.
5. Serve the BBQ chicken with the mixed peppers, onion, and cherry tomatoes on the side.
6. Make delicious wraps or simply serve it on top of your baked potato.
Garlic Butter Star Baked Potatoes Topped with Cheddar:
Ingredients:
- 4 large Russet potatoes
- 4 tbsp butter
- 4 cloves garlic, minced
- Salt and pepper to taste
- Cheddar cheese, grated
Instructions:
1. Preheat the BBQ to 400°F (200°C).
2. Wash and scrub the potatoes, then cut them into a star without cutting all the way through, making sure they stay connected at the bottom.
3. In a small bowl, melt the butter and mix in the minced garlic, salt, and pepper.
4. Place the potatoes on a piece of baking foil and brush the garlic butter mixture over each potato, making sure some of it gets in between the slices. Wrap tightly.
5. Bake the potatoes on the top shelf of your BBQ with the lid closed for about 50-60 minutes or until they are crispy on the outside and tender on the inside.
6. Remove the potatoes from the BBQ, sprinkle grated cheddar cheese over the top, and return to the BBQ for a few more minutes until the cheese is melted and bubbly.
7. Serve the garlic butter star baked potatoes with the Mediterranean BBQ chicken and enjoy your delicious meal!
