Jumbo Cod Fish Finger Subs, with Garlic Butter Chunky Chips.


With Salted Butter, Lettuce Red Onion & Mayonnaise,


Lashings of Sea Salt & Malt Vinegar,


Delicious side of Mushy Peas & Tartar Sauce.


Sometimes it's the simple things in life that are the best.


Now this was absolutely delicious.


Recipe for Battered Jumbo Cod Fish Finger Subs


Ingredients:

- 4 jumbo cod fillets

- 4 sub rolls

- 1 cup all-purpose flour

- 1 teaspoon baking powder

- 1/2 teaspoon salt

- 1 cup cold water

- 1 egg, beaten

- 2 cups breadcrumbs

- Vegetable oil for frying

- Lettuce, Red Onion and tartar sauce (for serving)


Instructions:

1. Prepare the cod fillets by cutting them into large fish finger-sized pieces.

2. In a shallow dish, mix together the flour, baking powder, and salt. In another dish, mix the cold water and beaten egg.

3. Dip each cod fillet into the flour mixture, then into the egg mixture, and finally coat in breadcrumbs, pressing the breadcrumbs onto the fish to get a good coating.

4. Heat the vegetable oil in a large skillet over medium heat. Fry the cod fillets for 4-5 minutes on each side, or until golden brown and crispy.

5. While the fish is frying, toast the sub rolls in the oven or on a griddle.

6. Once the cod fillets are cooked, remove them from the oil and drain on paper towels.

7. To assemble the subs, place a few pieces of lettuce and red onion on the bottom half of each sub roll. Top with a couple of the crispy cod fish fingers, and a dollop of Mayonnaise

8. Serve the subs immediately while the fish is still hot and crispy.
