Green Trees Garlic Butter Soup, With a side of Garlic Butter & Cheddar Croutons


With a side of Garlic Butter & Cheddar Croutons


Ingredients:

- 1 large bag of tender stem broccoli, chopped into florets

- 1.5ltr of vegetable or chicken broth

- 1 Large onion, chopped

- 3 cloves of garlic, minced

- 3 tablespoons of unsalted butter

- Salt and pepper to taste

- 1 Large sweet potato

- 1 tspn Mixed herbs

- Large regular potato

- Half Cabbage finely chopped

- Cup Garden peas

- Optional: grated Parmesan or cheddar cheese for garnish


Instructions:

1. In a large pot, melt 2 tablespoons of butter over medium heat. Add the chopped onion and sauté until softened, about 5 minutes.

2. Add the minced garlic and continue to sauté for another 2 minutes.

3. Add the broccoli florets and the rest of your vegetables to the pot and sauté for 5-7 minutes, until the broccoli is bright green and slightly tender.

4. Pour in the vegetable or chicken broth and bring the mixture to a simmer. Cook for 20 to 30 minutes, or until the broccoli is completely tender.

5. Use an immersion blender or transfer the soup to a blender to blend until smooth. If using a blender, blend the soup in batches and be careful as it will be hot.

6. Once the soup is smooth, return it to the pot and keep it warm over low heat. Season with salt and pepper to taste.


Add a handful of Cheddar and gently stir.


For the Garlic Butter Cheddar Croutons:

- 4 slices of bread, cut into cubes

- 3 tablespoons of unsalted butter

- 1 clove of garlic, minced

- 1/2 cup of shredded cheddar cheese

- Salt and pepper to taste


Instructions:

1. In a skillet, melt 3 tablespoons of butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.

2. Add the bread cubes to the skillet and toss to coat in the garlic butter. Sauté for 5-7 minutes, stirring occasionally, until the croutons are golden and crispy.

3. Sprinkle the shredded cheddar cheese over the croutons and continue cooking until the cheese is melted and the croutons are coated.

4. Season with salt and pepper to taste.


Serve the Green Tree Broccoli soup in bowls, garnished with a drizzle of garlic butter and a handful of garlic butter cheddar croutons.
