Garlic Mozzarella Stuffed Chicken Breasts, wrapped in Streaky Bacon & Topped with BBQ Sauce & Cheddar,
Served with Garlic Butter Salt & Pepper Baked Potato, Topped with Chedder and Parsley & Salad Garnish,

Ingredients
4 x Large Chicken Breasts
4 x Large Baking Potato
300g Streaky Bacon
250g Cheddar
450g Fresh Mozzarella (drained weight)
4 tblsp Butter
2 tblsp Garlic Granules
Parsley
Sea Salt Cracked Black Pepper (Plenty)
Splash BBQ Sauce
The Baked Potato's
Stab the Potatoes with a fork, melt two tblsp of Butter, add half the Garlic Granules, brush over the potatoes, add plenty of Sea Salt and Cracked Black Pepper, Cover in baking foil, Place them at the top of the oven for 2 hours at 200ºC
The Chicken Breasts
Cut the chicken breasts in half, add slices of the fresh Mozzarella, Sprinkle over the Garlic Granules & Parsley, close the Chicken Breasts, wrapped in the Streaky Bacon, Make a Baking Foil Boat, leave the top open as you want the Bacon to crisp up, place in the middle of the oven for 1½ hours,
Once the Chicken is done add BBQ Sauce and Cheddar to the top, Place back in the oven until it’s golden brown and melted,
Back to the potatoes,
Cut the top into a star pattern fluff up the Potato, add 1 tblsp of Butter, top with Cheddar and a sprinkle of Parsley,
Serve them with a delicious side salad of your choice and enjoy,
