Garlic & Herb Crusted Roast Lamb & Pork Sharing Platter, Served with Garlic Herb Roast Potatoes

Garlic & Herb Crusted Roast Lamb & Pork Sharing Platter, Served with a side of Garlic Herb Roast Potato's, Seasoning Vegetables and Yorkshire Pudding, Lincolnshire Sausage and Cauliflower Cheese, Sage and Onion Stuffing


Prep time 30mins Cook time 2 hour @180ºC then 1 hour @200ºC


Ingredients


5 x tblsp Olive Oil

1 x tsp Rosemary

1 x tsp Thyme

1 x tsp Sage

1 x tsp Parsley

1 x tsp Garlic

1 x tsp Mustard

1 x Vegetable stock cube

Sea Salt, Cracked Black Pepper (Plenty)


Directions


Mix the Olive Oil, all the ingredients thoroughly in a jug, using a Pastry brush coat the Lamb, Pork and the Roasting Potato, all over until completely covered in the garlic and herbs,


Cover with Cooking Foil, as tight as you can place in the oven at 180ºC for 2 hours,


After 2 hours remove from the oven remove the foil, remember to save the foil for later, drizzle over the Lamb, Pork and Roast Potato's with the juices from the Roasting Pan,


Place back in the oven now at 200ºC for 30 to 45 minutes,


Remove from the oven place on a serving platter cover with foil and allow to rest for 15 minutes before Carving,


Drain all the meat juice into a pan add 1.5ltr of boiling water add Lamb or Beef Gravy Granules for the most unbelievable flavoured Lamb Gravy,


Serve with a side of mashed potato, seasonal vegetables and Yorkshire Pudding.
