I do love curry night, and this didn't disappoint, it was absolutely delicious.


Next one will definitely be hot though.


Ingredients:

- 1 kg chicken, cut into bite-sized pieces

- 1 onion, finely chopped

- 2 cloves of garlic, minced

- 1 tsp ginger, grated

- 500ml coconut cream

- 250ml plain yogurt

- 2 tbsp vegetable oil

- 1 tsp ground coriander

- 1 tsp ground cumin

- 1/2 tsp turmeric powder

- 1/2 tsp chili powder (adjust to taste)

- Salt to taste

- Chopped cilantro for garnish


Instructions:

1. Heat oil in a large pan over medium heat. Add chopped onions and cook until softened.

2. Add minced garlic and grated ginger, cook for another minute.


3. Add the chicken pieces to the pan and cook until they are browned on all sides.


4. Add ground coriander, cumin, turmeric, chili powder, and salt. Stir well to coat the chicken with the spices.


5. Pour in the coconut milk and yogurt. Stir everything together, reduce heat to low, cover the pan, and let it simmer for about 20-25 minutes or until the chicken is cooked through.


6. Check the seasoning and adjust salt and spice levels if needed.


7. Garnish with chopped coriander before serving.


Smashed Onion Bhaji


To make smashed onion bhajis, you will need the following ingredients:


- 2 large onions

- 1 cup chickpea flour

- 1 teaspoon cumin seeds

- 1 teaspoon coriander powder

- 1/2 teaspoon turmeric powder

- 1/2 teaspoon chili powder (adjust to taste)

- Salt to taste

- Water

- Oil for frying


Here's how you can make smashed onion bhajis:


1. Peel and thinly slice the onions.


2. In a large mixing bowl, combine the sliced onions, chickpea flour, cumin seeds, coriander powder, turmeric powder, chili powder, and salt.


3. Gradually add water to the mixture and mix well until you have a thick batter that coats the onions.


4. Heat oil in a deep frying pan or kadhai over medium heat.


5. Take small portions of the batter and carefully drop them into the hot oil. Fry the bhajis in batches until they are golden brown and crisp.


6. Remove the bhajis from the oil using a slotted spoon and drain them on paper towels to remove excess oil.


7. Gently squash flat with a spatula


8. Serve the smash onion bhajis hot with your favorite chutney or sauce.


Enjoy your delicious smashed onion bhajis!


To make a Giant Naan, you'll need the following ingredients:


- 480g of all-purpose flour, plain flour

- 1 teaspoon of salt

- 1 teaspoon of baking powder

- 1 cup of warm water

- 125ml cup of plain yogurt

- 2 tablespoons of olive oil

- 1 tablespoon of sugar

- Butter or ghee for brushing


Instructions:


1. In a large mixing bowl, combine the flour, salt, and baking powder.


2. In a separate bowl, mix together the warm water, yogurt, olive oil, and sugar.


3. Slowly add the wet ingredients to the dry ingredients and mix until a dough forms.


4. Knead the dough for about 5-7 minutes until it becomes smooth and elastic.


5. Cover the dough and let it rest for about 1-2 hours.


6. Preheat your oven to the highest temperature setting.


7. Divide the dough into 2-3 equal parts and roll out each piece into a large circle, about 1/4 inch thick.


8. Place the rolled-out dough on a baking sheet and bake in the preheated oven for 5-7 minutes, or until puffed up and slightly browned.


9. Remove the naan from the oven and brush with butter or ghee.


10. Serve warm and enjoy your giant naan bread!


Feel free to customize your giant naan with toppings like garlic, cheese and parsley I know its not authentic but its still delicious
