Carrot & Coriander Soup with Giant Garlic Butter Cheese Topped Croutons,


So I'm making Carrot and Coriander soup the most simplest of soups to make,


I prefer to Caramelise all the vegetables in Garlic Butter and a little olive oil, Sea Salt, Cracked Black Pepper,


Served with a side of Toasted Brioche, Garlic Butter, Cheese Croutons, and obviously I had to taste a small bowl with some Croutons and Sour Cream,


Ingredients


4 large carrots

1 large onion

1 large potato

1 tbsp Coriander, fresh is always better

1 tsp each Sea Salt and Cracked Black Pepper

1 tsp Garlic and Herb seasoning

1 tsp Garlic purée

1 tblsp tomato purée

2x veg stock cubes in 1.5ltr boiling water


Everything go into a large none stick pan, I fry everything in Garlic butter until they are completely Caramelised and soft and sweet, including the garlic purée herbs and tomato purée, salt and pepper


Add 2 thirds of the stock simmer for around half an hour, Blend in the same pan, if it too thick slowly add the remaining stock until its at the consistency you like,


Serve with Cheddar and Sour Cream for Extra Calories 👀


The Giant Garlic Butter Croutons


6 Brioche Hotdogs buns cut into chunks, toss them into a bowl,

I make my own Garlic Herb Butter so I slice a large chunk of the roll, so about two large tablespoons melt it in the microwave, cover the Brioche chunks and air fry until crispy, add salt an pepper to taste,


The Garlic and Herb seasoning grinder is absolutely wonderful the flavour it gives is fantastic i highly recommend them, I us it on pizza, chicken, soup and in Casseroles, even a cottage pie, the content are as follows Dried Garlic (33%), Sea Salt, Dried Tomato (12%), Black Pepper, White Pepper, Chilli Flakes, Dried Parsley (4%), Dried Sage (2%
