Beef & Pork Sausage Casserole, Beef Dripping Yorkshire Pudding, & Cheddar Topped Parsley Mash

Chunked Roasting Joint,

Beef & Sausage Casserole, with Beef Dripping Yorkshire Pudding, with a side of Cheddar Topped Parsley Mashed potato,


Total cost £14.50 that's only £2.41 per portion,

This will feed 6 people easily with some left over for the freezer,


This is the perfect winter food, it's absolutely delicious and only takes 20mins prep and 40 minutues in the pressure cooker or slow cooker for 7 hours,


Ingredients


1 kg Roasting Joint and dice it yourself, you get more for your money,


2.5kg Red Potatoes


8 x Pork Sausage, or any you like,


6 x Beef Dripping Yorkshire Puddings, the bigger the better,


2 x Knorr Beef Stock Pot's


1 x tblsp Olive Oil


3 x tblsp Butter


1 x tsp mixed herbs


1 x tsp Garlic Granules, or 3 Cloves crushed,


1 x large white Onion


1 x tblsp Flour


5 x Carrots


4 x Savoy Cabbage Leaf


Cup of Petit Pois Peas, or as many as you like,


1 x ltr Boiling Water


Parsley to Garnish


Sea Salt Cracked Black Pepper


Directions


Peal Chop and boil 2.5kg Red Potatoes, once soft mash with 2 tblsp of Butter, Sea Salt Cracked Black Pepper and Plenty of Parsley,


While the potatoes are boiling


Start with two frying pans, add the beef and sausage to one pan with a little olive oil, salt and pepper, Start to brown the meat, one brown add 1tbsp of flour and coat the meat,


Second frying pan, add the chopped onion, carrots, peas and Cabbage, add a splash of Olive Oil and a tblsp of Butter, fry until Caramelised and soft, salt and pepper,


Add both pans to the pressure cooker, or slow cooker, mix the two stock pot's to 1.5ltr of boiling water,


Set the pressure cooker to Casserole for 40 minutes, or slow cooker on low for around 7 hours,


Serve with the Beef Dripping Yorkshire Pudding and side of Cheddar Topped Parsley Mashed potato.
